Mmmmmm salad!   OK, so this may not be what you think – salad does seem kind of boring at times.  But it doesn’t have to be!!  I used to think so but then discovered all sorts of ingredients to add to boring lettuce leaves to make it taste great.

Start with leafy greens – your best bet is spinach but you really can use whatever you like or have available.   Then, the rest is up to you!   Pecans, strawberries, carrots, peppers, cherries, blueberries, black beans, oranges, tomatoes, broccoli, ham, chicken, hard boiled eggs……. It is completely up to you!  Vary your ingredients for variety, and to get your body all the nutrients it can!

One thing you do have to watch out for when creating a salad is not to add too many “bad” ingredients like croutons, cheese, or heavy dressings.  Of course if you really want these ingredients – by all means indulge yourself, but remember with these, a little goes a long way!

For dressings choose a lite vinaigrette or even just use olive oil or lemon or lime juice squeezed over top.  If you are using a lot of fruit like oranges or strawberries in your salad, you may find that you don’t even need dressing.

Salads are a GREAT way to get in your fruits and vegetables and make a great side dish, or even complete meal!
