The avocado. So misunderstood. Well here is the deal. They are very good for you, high in monounsaturated fats (the good kind for skin and your health!) and they keep you filled up for a long time. I eat ½ of one almost everyday in the form of a healthy guacamole salad. Here’s my recipe:
Chunky Guacamole Salad
1 large, ripe avocado (or 2 small ones)
1 small tomato, cut up
½ onion, chopped fine
½ cup of coriander leaves (cilantro), chopped fine
1.5 tsps of chopped garlic (optional in case you want to take this in a lunch)
1-2 tbsps of lime juice
1 tsp salt
1 tsp black peppers
Your favourite greens (I like leaf, romaine, or butter lettuce)
Mash the avocado in a bowl. In a separate bowl combine the rest of the ingredients minus your favourite greens. Mix the avocado with the other ingredients. Serve a large dollop over your greens or have with corn chips. Enjoy!
